I am finally feeling well enough to do some baking!! Hooray! Because I have missed it! That’s one of my favorite parts of fall. And this afternoon, I found the perfect recipe in my box – Pumpkin Oatmeal Cookies. I have no idea who gave this recipe to me, but it’s perfect for baking with the kids. Emily helped me make these simple yummy cookies and we’ve all enjoyed them. Except Nate who is working late tonight. Oh well. 

With a light pumpkin flavor, Pumpkin Oatmeal Cookies are the perfect fall twist to a classic favorite cookie. They’re great for an afternoon snack for the kids. (Guess what Nathan is getting in his lunch today?) Or after dinner. Or to take on-the-go. The whole family will enjoy them.

Pumpkin Oatmeal Cookies:

What You’ll Need:

  • 1/2 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 cup of pumpkin (not pumpkin pie filling)
  • 2 eggs
  • 1 teaspoon vanilla
  • 1.5 cups flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3 cups oatmeal (old fashioned is best)
  • 1/2-1 cup raisins

Heat the oven to 350°. Beat the softened butter in your mixer until creamed well. Add the sugars and mix well.

Add the pumpkin, eggs, and vanilla; beat.

Combine the flour, baking soda and spices; add to the pumpkin mixture and mix.

Stir in the oatmeal…

…and raisins. My kids had raided the raisin bin again so I only had 1/2 cup. I usually like to add a full cup because we love raisins.

Drop rounded teaspoonfuls onto cookie sheets and bake for 12-15 minutes.

Ingredients
  1. 1/2 cup butter, softened
  2. 1 cup brown sugar
  3. 1/2 cup sugar
  4. 1 cup of pumpkin (not pumpkin pie filling)
  5. 2 eggs
  6. 1 teaspoon vanilla
  7. 1.5 cups flour
  8. 1 tsp baking soda
  9. 1 tsp cinnamon
  10. 1/2 tsp nutmeg
  11. 3 cups oatmeal (old fashioned is best)
  12. 1/2-1 cup raisins
Instructions
  1. Heat the oven to 350°.
  2. Beat the softened butter until it's creamed well. Add the sugars and mix.
  3. Add the pumpkin, eggs, and vanilla; beat.
  4. Combine the flour, baking soda and spices in a separate bowl; add to the pumpkin mixture and mix. Stir in the oatmeal, and lastly the raisins.
  5. Drop rounded teaspoonfuls onto cookie sheets and bake for 12-15 minutes.
  6. Cool completely on a wire rack.

  7. I think this is probably a better recipe than the pumpkin cookies I have tried before. They always come out too wet but the oatmeal would help I bet. They look tasty!

    I’ve been teaching my granddaughter Olivia how to cook simple things like scrambled eggs and toast (she is 4 years old) and she can do it pretty well on her own (with supervision at the stove, of course) I am going to try to make this cookies with her. She loves pumpkin.
