Italian Sausage and Cheese Braid

This is one of my favorite recipes. Bread braids are so easy, and make you look like a rock star as they are so pretty! Enjoy! You can also find my recipe for a Cream Cheese Braid on my blog, Virtually Yours!

This recipe is so easy and looks like you have slaved over a hot oven all day!

Italian Sausage and Cheese Braid

1 loaf frozen ready-made dough
1 pd Italian mild sausage
2 cups shredded Mozzarella Cheese
2 cans Del Monte diced Italian tomatoes
2 T olive oil
1 onion
1 T minced garlic
one egg white
Remove one loaf of bread dough from package, and leave the rest in freezer. Follow directions to let thaw or thaw in microwave. I have done both, and both work well.

Begin sauce by sautéing onion and garlic in olive oil. Once soft, add sausage. Cook until no longer pink.


Drain sausage until there is just a little liquid. Add tomatoes, and let simmer for 30 minutes. Let cool.


Split thawed loaf of bread dough in half and roll out to 2- 12 by 8 rectangles.
Spread cooled sausage sauce down each rectangle. Try not to get too much of the liquid. Top with a cup of the cheese.

Now for the fun part! Beginning at the edge of the filling, cut dough to end in 1 inch wide strips, all the way down the dough, along each side. You will probably have 10 1-inch “flaps” along each side of the dough.


Fold these strips over one at a time, in a braiding fashion. Once you begin, you will understand. Trust me, after you have done this 10 times, you’ll realize that one strip out of place won’t matter!


Now that you have your braid assembled, put a dry towel over it and put it in a warm place for one hour, or proof it in your oven.
It will close to double in size!
After proofing, wisk 1 egg yolk with T water and brush over top of each braid.


Bake at 350 degrees for about 30 minutes. Let cool slightly.
Serve warm with more sauce and grated parmesan cheese on the side. A green salad completes the meal!
If you would like to freeze the 2nd braid, wrap with wax paper and store in large baggie in freezer for up to 1 month.  Bake for 20 minutes or until hot. A printable version is available here.
