Delicious Almond Chicken Salad Recipe

There’s many chicken salad recipe varieties and this yummy combination of grapes, celery, various seasonings, almonds, and of course chicken has always been a hit. I’ve been making this recipe for years, and while I’ve tried others, this has always been my favorite version.

What you’ll need:

  •  4 cups chopped, cubed chicken
  • 1.5 cups seedless grapes, halved
  • 1 cup celery, chopped
  • 3 hard-cooked eggs, peeled and chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon celery salt
  • 1/8 teaspoon ground mustard
  • 1/8 teaspoon paprika
  • 1/2 cup slivered almonds

This recipe is pretty easy to make. Start by adding the chicken, grapes, celery, and eggs (don’t forget to hard boil and chop them first!) into a large bowl. Then gently combine them.

In another smaller bowl, combine the next 9 ingredients – mayonnaise (I use Miracle Whip), sour cream, mustard (regular yellow), salt, pepper, onion powder, celery salt, ground mustard, and paprika.

Mixed:

Pour the mayo mixture over the chicken and toss gently.

Save the almonds until just before you serve the chicken salad. They taste better that way! Store in the refrigerator.

You can serve this many different ways – I like to eat it over a bed of lettuce, but you can also wrap it in a tortilla, or serve on bread or a croissant. OR you tell me – what’s your favorite way to eat chicken salad?

Almond Chicken Salad

  • 4 cups chopped, cubed chicken

  • 1 cup celery, chopped

  • 1/4 cup sour cream

  • 1/4 teaspoon pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon celery salt
  • 1/8 teaspoon ground mustard
  • 1/8 teaspoon paprika
  • 1/2 cup slivered almonds
  • In a large bowl, combine the chicken, grapes, celery, and eggs. In another bowl, mix the next 9 ingredients (all except the almonds) until smooth. Pour over the chicken mixture and toss gently. Stir in almonds and serve immediately, or refrigerate and add the almonds just before serving.
