Sweet Corn: Delicious and Healthy

It’s around this time of year that sweet corn becomes more readily available at grocery stores all over the nation. It’s almost summer time and corn is perfect for cookouts and picnics. But corn isn’t just available during the summer; it can actually be purchased year round – yes, even springtime!

Corn is tasty, but did you know it has health benefits too? It’s a great way to get more whole grains and fiber into your diet, which help lower the risk of things like heart disease, diabetes, certain cancers, and other health issues. It’s also one of the best food sources of antioxidants that help protect and promote healthy vision. I knew that corn was a good source of fiber, but I had no idea it was good for eyesight!

I grew up with my mom cooking corn-on-the-cob by boiling it in a big pot on the stove. It works, but it takes awhile and it’s not great for hot summer days when you don’t want to heat up the kitchen. Believe it or not, I didn’t know you could grill corn! When I visited the Sunshine Sweet Corn site to check out some corn recipes for this campaign, I learned a lot. I didn’t realize there were so many ways to cook corn!

This weekend, with some fresh sweet corn I just bought from the store, we tried a new recipe idea. It was really simple – my husband grilled the corn for a few minutes, turning it occasionally, and then we sprinkled on some parmesan cheese and steak rub and grilled for 1-2 more minutes. Not only was it much quicker and easier than my old method, but it was delicious!

I also learned a couple tips about sweet corn:

  • Store corn in an airtight bag or container in the refrigerator for up to 5 days (husked or unhusked)
  • You don’t need a fancy tool to remove corn kernels; you can use a large knife to carefully cut if off.

I enjoyed this video about various ways to grill corn. I’m going to try the olive oil and herb mixture next time.

I’ll be taking advantage of the tips I’ve learned and my family will be eating a lot of fresh sweet corn this year.

  3. we love to grill our corn in tin foil with butter. i break the cob in half and then stick those corn gripper/stake things in the ends so he can hold it without dropping it a million times!

    as a fellow SAHM it is so awesome to be able to organize a fully “grillable meal” – steaks or chicken, corn on the cob and texas toast. then when my husband gets home he gets to hang out outside with our oldest while he grills and i get a little one on time with the youngest.

  6. I am a Southern Gal, so corn is a huge part of my diet, but I have to say I have never had it grilled! I love summer for the fresh corn, but I can it so I can have great corn year round too!

    I can put away some sweet corn. It is so good when it’s grilled. My husband was diagnosed with Diverticulosis a couple of years ago, so he has to avoid eating corn. Since it was one if is favorite veggies, I try ottoet it around him, but, man, is it good.

    I love this sweet corn just as it is. I don’t need butter or anything else. As my 4 yr old neice says I eat it naked. Lol! It’s good on the grill too.

    I didn’t know corn was good for your eyesight either! I absolutely love sweet corn on the cob. It is a summer favorite of mine and we get the best corn at our local farm. What is even better is that we can shuck the corn right as the farm and feed the husks to a bunch of different animals there. I becomes a family event.

    I knew it was healthy, but I had no idea it was good for eyesight either! That’s great info. Grilled corn on the cob is one of our favorite summer foods. It’s not just delicious, but it’s a food that both of my kids will eat without putting up a fight :)

    I love sweet corn on the cob, especially grilled. My favorite summer meal is grilled fresh salmon, grilled corn on the cob, and a fresh salad. Preferably eaten outside by the pool!

    I did not know that it was good for eyesight! I like to eat it on the cob but my husband uses a knife to cut if off so it doesn’t get stuck in your teeth. I think half the fun is eating it on the cob!

    Thamks for showing us the benefits of this delicious veggie! We love sweet corn, there is a huge festival about corn here at the end of the summer! We pour boiling water in an older cooler, shuck the corn, throw it in and in about 20 minutes it’s done!
